Bison Burgers

Place the ground bison in a mixing bowl and add the minced onion, sage, thyme, pepper and Worcestershire. Mix with your hands thoroughly.

Bison Burgers

Form your burgers in approximately 1/3 pound patties or slider size based on your preference.

Grill over a medium heat until the burger reaches your desired doneness.

For the caramelized onions

Place two tablespoons of butter in a small pan and heat over low heat.

Slice the Vidalia onion and add to the pan and cook over low heat until caramelized.

Add beef broth and worcestershire to the pan and simmer until the liquid is reduced.

Finishing it Off

Once the burgers are cooked place on the brioche bun with some spring blend lettuce, shaved gruyere and top with the caramelized onion. You can always add the typical toppings if you like.

1 tablespoon sage

1 tablespoon thyme

1/2 teaspoon salt

2 teaspoons 5 peppercorn mélange

1/2 Vidalia onion minced

1/2 tablespoon Worcestershire

1 package brioche buns

Shaved Gruyere
