Directions

Butterfly both the hot and sweet sausage and grill over a medium heat. Watch for flare ups

Remove the sausage from the grill and cut in halves, set it aside in a plate

Heat olive oil in large pan or wok and add in the sliced bell peppers and toss. and cook for 5 minutes.

Add the onions to the peppers and cook until onions and peppers are soft.

Add the marsala wine, grilled sausages, herbs and tomato sauce. Simmer for approx. 30-40 minutes tossing as needed.

Serve on a fresh sliced roll or over some rice.

I suggest buying s $7-$10.00 quality Marsala wine. the cooking versions often are loaded with sodium and taste awful. If you cant drink it DON'T cook with it people!

Ingredients

3 Tablespoons live oil

2lbs Hot Italian sausage butterflied

2lbs Sweet Italian sausage butterflied

2 Green bell peppers sliced

2 Red bell peppers sliced

2 Yellow bell peppers sliced

1 Large Vidalia onion sliced

3/4 cup quality marsala wine ( not cooking wine)

1 6-8oz can tomato sauce

2 tablespoons fresh oregano

2 tablespoons fresh parsley

salt and pepper to taste
